Background Information
Villa Sandi is a beautiful Palladian style villa which dates back to 1622 and lies in the heart of Treviso, at the bottom of the foot of the Valdobbiadene Prosecco DOCG hills. The Villa is owned by the Moretti Polegato family, who have been devoted to winemaking for three generations and today is one of the leading Prosecco producers, recognised across the globe for its outstanding award-winning wines. The winery is at the forefront of technology and innovation, and set themselves apart by freezing the must prior to secondary fermentation ensure the wines maintain maximum freshness, and more recently producing a no-added sulphur Prosecco.
Tasting Note
Very pale straw yellow and fine persistent perlage. Fruity and flowery with delicate aromatic and citrus hints. Fresh and lively in the mouth. Light bodied and elegant with an agreeably aromatic and fruit persistence.

An excellent aperitif to accompany savouries. Ideal with steamed shellfish.

Vineyard info/Viticulture
Prosecco is a typical wine of Veneto region. The production area extends in the province of Treviso in the D.O.C. area of Prosecco including the hills of morainic origin over the plain with medium textured soils of alluvial origin.
Vinification
Whole grapes are put into the pneumatic press for soft pressing and the resulting must, after a first racking, is put into controlled temperature tanks where it remains until it is used for the production of sparkling wine. The must with added yeast cultures selected by Villa Sandi is then put into vessels where fermentation takes place at a controlled temperature of 15-16C to enhance all the harvest fragrances. Upon reaching the required alcohol and sugar content fermentation is stopped by refrigeration. After a short settling period the sparkling wine is ready for bottling
